We are working with small growers to rebuild local grain economies and reconnect us to stories long forgotten.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAt the foothills of Majella in Italy’s mountainous Abruzzo region, a group of farmers are cultivating a “soft” wheat known as Solina, a variety which was sourced from the hilltop of Santo Stefano di Sessanio, where straight strips of fields are cultivated at 1200m above sea level. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eSolina has been preserved as a rare cultivar and grows very tall, sometimes reaching 180cm. The cultivation is demanding, with low yield and arduous mountains terrains. Cultivation must be alternated with crops such as corn and potatoes and then with forage or grain legumes such as chickpeas and lentils; waiting times for the harvest are long, especially at higher altitudes. Solina is a limited wheat as the average yield is not high. The ability of this grain to survive in poor soil and hostile weather has in the past ensured the sustenance of the local communities. There is an old saying from the Abruzzo region: “Solina is the mother of all grains”. Our Resilience Blend is comprised of heritage varieties selected for their suitability to thrive in local organic farmland, how they interact together as a blend regarding their baking properties, and their flavour.\u003c\/p\u003e\n\u003cp\u003eBy growing a blend of wheats, this offers an insurance policy against changing climate conditions and evolving plant diseases – the reason for calling it our \u003cstrong\u003e“Resilience Blend”\u003c\/strong\u003e. For example, where one variety might be susceptible to a particular disease, the other varieties may not be affected and the harvest survives (unlike with a monoculture). Over time, the wheat population adapts to the land and weather, with the most successful varieties thriving. Heritage varieties have deeper root systems so they can extract nutrients from deeper in the ground.\u003c\/p\u003e\n\u003cp\u003eIt reintroduces biodiversity to agriculture through growing a number of wheat varieties, to move away from the current monoculture of single varieties.\u003c\/p\u003e\n\u003cp\u003eIt could take several years to fine tune a blend of wheat for a specific environment. The guiding principle is that “chaos” wheat is better equipped to deal with any chaotic climate events it may encounter. The Bread Lab coined this term “chaos wheat” to describe maslins as presenting “genetic chaos in a field” (Stephen Jones, former Bread Lab director). This technique of growing multiple varieties as an insurance policy is nothing new, and has been employed by farmers over the centuries to help them deal with uncertainties from climate and disease.\u003c\/p\u003e\n\u003cp\u003eOur Resilience Blend flour is milled from a variety of populations, including Millers Choice and Torth y Tir, all farmed organically by a group of UK farmers (currently including Ampney Brook, Abbey Home Farm, Goodwood Estate, Lower Dean Farm, and Linley Estate). All the growers work to improve soil health and to support the environment through organic farming practices. \u003cspan style=\"font-size: 0.875rem;\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eWe class this flour as an “all-purpose” style flour due to the delicate gluten and relatively lower protein content. If you are an experienced baker you can make fantastic sourdough with it. If you are a beginner, it would be suitable for yeasted breads and tin loaves, rolls, and baguettes.
